I figured out why I hardly ever post our menu plan. We go grocery shopping on Friday, and by the time I get home, I don't want to write a post. I also spend the weekend blogging about our homeschool. I would like to make a habit of posting our menu plan, but I guess I will just have to figure out a good day to be consistent posting day. But, here is what we have been eating this past week.
Friday: I made hamburgers from ground beef. I add Riley's seasoning and Worcestershire sauce. We also had french fries.
Saturday: Baked potatoes with butter, sour cream, and shredded cheese. We haven't had these in so long!! So yummy!!
Sunday: We had meatloaf and mashed potatoes. I use the meatloaf recipe from Confessions of a Homeschooler-yummy!!!
Monday: I tried out a new recipe this week: Baked Tortellini Casserole from No. 2 Pencil. It was good! I would personally drain the meat and tomatoes next time, as it was a bit on the saucy side. But, everyone ate it and Charger even asked for seconds. I have been eating the leftovers for lunch, too. Very good!
Tuesday: Pork roast with potatoes and carrots. I just added a Lipton Tea onion soup packet and a couple cups of water and put it in the slow cooker. I love having dinner just ready for me at the end of school!
Wednesday: Tonight we were supposed to have AWANA, so mac and cheese was on the list. Well, it was snowed out, so I still made the mac and cheese. But, I added ham, carrots, parsley, and sour cream. Much better.
Thursday: Tomorrow night will be spaghetti with meat sauce. I add the Riley's seasoning to the spaghetti meat, too.
Friday night: This week we will have lots of leftovers to eat up, which will save us on groceries for next week :).
Oh, you probably noticed that we had a lot of potatoes this week. My husband requested them, so I used them a lot. Always good for filling bellies on cold nights.

Weekly Menu Plan
I know most people post these on Monday, but I shop on Friday. So, I plan on Friday. I have always planned, but for some reason I hardly ever post my plan. Thought I'd give it a try :).
Friday-Pizza. Nothing too exciting, I often pick up a Little Caesar's pizza or two to eat when we get home from our long trip to town to run errands.
Saturday-We are trying a new recipe this week: Iowa Maid Rites. I really hope they are good! You can check out my Pinterest pin here. They are made in the crock pot, so they should be ready when we get home from church! We'll have fries with these.
Sunday-Grilled cheese and potato soup. My family really enjoys the Bear Creek soup, and I find it easy and yummy to make. We head to Bible study after dinner so I need something easy.
Monday-A few weeks back, we tried this yummy taco ring from Pampered Chef. This will be the third time we have had it, it's so good!
Tuesday-Because I am in love with my crock pot-especially during school week-we will be having a pot roast with potatoes and carrots. Mmmm.
Wednesday-AWANA night, which means our eating schedule is all mixed up. Mac and cheese it is. If people are super hungry, we have hot dogs. I make sure I choose food my kids really love so that I know for sure they will eat before they go. My kids are not easy to deal with when they are hungry and I don't want them getting kicked out of AWANA :).
Thursday-One last crock pot meal is one that we just tried out this last week, but we are already ready to try it again-plus I had purchased some of the ingredients in bulk and it cut down on my grocery bill this week to make it again. We will be having Slow-Cooker Creamy Chicken with Biscuits. I doubt there will be leftovers.
Oh, and I hope you don't mind I didn't bore you with our breakfast and lunches. The kids always eat cereal. They are also very stuck in their PJ & J or meat and cheese sandwich meals. We add various sides, but overall it's the same thing, and they prefer it that way. Maybe someday that will change? I don't know. For now, I'm just happy to report I cook dinner :).

Menu Planning
I started menu planning this year out of necessity. Because we live about 30 minutes from town, and because it is NOT FUN to take 3 children under 5 with you to the grocery store. So, I try very hard to limit my shopping to only 1 day a week. This means no last minute runs to the store, which means I have to know exactly what I am going to need for the week, thus the menu planning. Oh man I wish I had done this before!
I dont know what made me think I didnt need to menu plan. Probably because I didnt think that I knew how to cook. I'm still not a chef, but apparently I CAN follow a recipe IF I know which one to use, where its at, and have all the ingredients! Amazingly enough, we have actually started eating real meals in addition to pizza.
I write our menu in a spreadsheet I downloaded from Openoffice.org. Then I can refer to last weeks when making this weeks. I also have a file for downloaded recipes that I hyperlink with my menu plan. I use it to write my list each week, that and my price list.
Now, there are times I leave my list on the kitchen table, or times that I forgot to write something on my list-its not fool proof ;), but it has been a real life saver!!
This is my menu for this week {I currently only plan evening meals}:
Day 1: Pizza {I always serve a large deli style Aldi pizza when we get home from shopping, I cant shop and cook in the same day-yet}
Day 2: Corndog Casserole {our new recipe for the week, I try to do one a week}
Day 3: Sloppy Joes, French fries, baked beans
Day 4: Frozen pizza {we dont usually have pizza 2x a week, but its Father's Day weekend and we will be in and out}
Day 5: Hamburger Helper & Salad {from our garden!}
*Normally a 7 day plan, but we will be celebrating a few meals with family this weekend. It's Father's Day and my birthday :).
Do you have any good tips for menu planning? I'm still a bit new to this!!
